Meal Prep Vermicelli Bowls

Don’t have a microwave at work or while traveling? This meal will be your best friend. And there are so many fun ways to assemble them! Pictured here, I have vermicelli noodles, shredded carrots, edamame, cucumbers, cilantro, bell peppers, and my Sweet and Spicy Crispy Tofu (which is out of control delicious – even if you’re not a tofu person, go make the sauce and use it with chicken or fish!).


Here are some ways I like to assemble my bowls:

  1. Base:
    Jasmine rice
    Vermicelli noodles (pictured here)
    Veggie noodles
  2. Protein:
    Baked chicken, sliced up
    Sauted chicken, sliced up (pictured here)
    Sauted shrimp
    Sauted/baked salmon
  3. Veggies:
    Chopped romaine lettuce
    Shredded carrots
    Green onions
    Sprouts/micro greens
  4. Sauce:
    Sweet chili glaze (bottled from your local grocery store)
    Almond butter sauce

Just to name a few! Get creative. Figure out what your stomach and palate love, and get to building. Have fun!
