Garlic Herb Roasted Fingerling Potatoes



Need a side dish that is Whole30 approved, easy AF, minimal clean up, and tastes better than French fries from your favorite fast food restaurant? You’re in the right place! These Garlic Herb Roasted Fingerling Potatoes are absolutely insane. They’re pretty darn perfect. I can’t wait for you guys to make these!


Oh, and can we also talk about how mouthwatering the potatoes look in these pictures? As a food blogger, our goal is to make you hungry just by looking at our photos. I’m pretty positive I achieved that goal today. CRISPY. SALTY. GOOEY ON THE INSIDE. CRUNCHY ON THE OUTSIDE. FRIGGEN POTATOES. AHHHHH. Who doesn’t love carbs? I’ll wait..

Alright team, are you guys ready to make these roasted potatoes? I’m ready to show ya how!


Let’s Get Cooking!







  • 1 lb Fingerling Potatoes

  • 2 Tsp Basil

  • 2 Tsp Oregano

  • 1/2 Tbsp Garlic Powder

  • 1/2 Tsp Ground Black Pepper

  • 1 Tsp Sea Salt

  • 2 Tbsp Olive Oil



  1. Preheat oven to 400F.

  2. Line a baking sheet with parchment paper OR aluminum foil.

  3. Chop potatoes in half, lengthwise.

  4. Toss potatoes in basil, oregano, garlic powder, black pepper, sea salt, and olive oil. Make sure all potatoes are coated evenly.

  5. Spread potatoes out evenly on your baking sheet.

  6. Roast at 400F for 20-25 minutes, until crispy.
