Summer is the perfect time to soak up the sun and enjoy the great outdoors, and what better way to do that than by heading to the beach or pool? Whether you’re planning a relaxing day by the water or a fun-filled pool party, having easy-to-make, healthy and portable meals is essential. I want to share some mouthwatering recipes that are perfect for your summer adventures. Get ready to enjoy summer with these tasty and hassle-free dishes.
Rotisserie Chicken Salad:
A refreshing and protein-packed Rotisserie Chicken Salad is an ideal beach or poolside meal. Start by shredding the tender meat from a store-bought rotisserie chicken. Toss it with crisp grapes, sliced almonds and some Primal Kitchen mayo. For an extra crunch, put it on top of a bed of lettuce or scoop with your favorite crackers!. Pack the salad in a portable container, and you’re ready to go.
Shrimp Ceviche:
Transport your taste buds to the coast with a zesty and tangy Shrimp Ceviche. Begin by cooking and cooling shrimp until they are firm and pink. Dice the shrimp and combine it with fresh lime juice, diced tomatoes, red onions, jalapeños, cilantro, cucumbers, avocado and a pinch of salt. Allow the flavors to meld together in the refrigerator for a couple of hours. Serve this refreshing ceviche with my favorite Siete tortilla chips for a light and flavorful beach or poolside snack.
Wraps:
Wraps are the epitome of convenience when it comes to beach or poolside meals. You can prepare a variety of fillings and let everyone customize their own wraps. One of my favs is the Chicken Caesar Avocado Wrap. Fill a tortilla with sliced grilled chicken, crisp romaine lettuce, creamy Caesar dressing, avocado slices, and a sprinkle of Parmesan cheese (or buy a bag of Caesar salad to make it easy). Roll it up tightly, slice it in half, and pack it in a container for a satisfying and portable meal.
Buffalo Chicken Dip:
For a snack that’s perfect for sharing at the beach or pool, whip up a batch of Buffalo Chicken Dip. This creamy and spicy dip is easy to make and goes great with tortilla chips or vegetable sticks. Combine shredded chicken, Greek yogurt, hot sauce, and ranch dressing seasoning packet in a to-go container and you’re ready to dive into deliciousness.
