The perfect party appetizer OR honestly the perfect snack to keep in the fridge during the week! It came out sooo good and is simple as ever to throw together.
Category Side Dishes
- 1 can corn, drained and rinsed
- 1 can black eyed peas, drained and rinsed
- 2 diced roma tomatoes
- 1 diced yellow bell pepper
- 1 bunch chopped green onions
- 1/2 bunch chopped cilantro
- 2 cloves finely minced ginger
- 2 large limes (or more to taste) juiced
- 1 diced large avocado
- Pinch of salt & paprika to taste
- Add all ingredients to a large bowl, mix and enjoy! I ate mine with my favorite Siete Foods Chips!
