LASAGNA!!! But make it healthy & clean (ish)
Here’s how I made it…
Ingredients
- THE MEAT: 1 Diced onion, 3 cloves minced garlic, 1 tbsp Avocado oil, 2 cups finely chopped greens, 1 lb grass fed beef, salt & pepper to taste
- NOODLES: 1 box of lasagna noodles
- CHEESE: 1 carton of Good Culture cottage cheese; 1/2 cup mozzarella; 1/2 cup parmesan; 1/2 tbsp dried oregano; 1/2 tbsp dried basil
- 32 oz jar of marinara
Instructions
- THE MEAT - Add avocado oil to a pot with diced onion & minced garlic. Cook until softened. Add finely chopped greens (I used collards bc it’s what was in my fridge!) and cook until softened. Add grass fed beef and brown fully into the veggies. Season to taste with lots of salt & pepper. Set aside.
- NOODLES - Bring a large pot of water to a rolling boil, add one box of lasagna noodles of choice, and cook until al dente. Drain and set aside.
- CHEESE - Mix together cottage cheese, mozzarella, parmesan, dried oregano, and dried Basil.
- LET’S ASSEMBLE - In an 8x8†square baking dish, start with a layer of maranara sauce at the bottom (about 1/3 cup-ish), then noodles (I had to cut mine with scissors a bit for them to fit in the pan), then spread the cheese mixture, sprinkle over the meat…& repeat until full!
- My very top layer was noodle, sauce, fresh grated parmesan, fresh basil.
- Bake it at 400F for 30-40 min, top with more fresh basil, and ENJOY!
- Serve it hot hot hot!
