- 1 lb bag dry lima beans
- 32 oz chicken broth
- 12 oz smoked andouille sausage
- 1 white onion
- 4 cloves fresh garlic
- Chop onion, mince garlic, and slice up sausage into circular, bite sized pieces.
- Add all prepared ingredients plus dry beans and broth to your crock pot, cover, lock, and slow cook on low for 8-10 hours.
- The beans will create a creamy texture and the sausage flavors it well, in my opinion! Add cajun seasoning to taste.
- Serve over white rice and enjoy.
