Add the low sodium chicken broth and bring to a simmer.
Next add the large handfuls of fresh chopped kale to the simmering broth. Cover the pot and let the kale smother into the soup. As the kale wilts down, decide if youâ€™d like to add more kale or leave it as is.
Season youâ€™re stew with salt and pepper, to taste.
Once the kale is completely smothered into the stew, add the cannellini beans and combine into the stew.
Simmer another 10 minutes, or so, season to taste if necessary, and youâ€™re ready to serve!
