Ingredients
- 1 tbsp olive oil
- 1 white onion, diced
- 4 links chicken apple sausage (I used Aidelle's brand)
- 2 cups low sodium chicken broth
- 2 large handfulls fresh chopped kale
- 1 can cannellini beans, drained and rinsed
- Salt and pepper to taste
Instructions
- Dice the white onion and add it to a large pot along with 1 tbsp of olive oil and sauté over medium heat for 5 minutes.
- Slice up the chicken apple sausage and add it to the pot. Stir and sauté the mixture to brown the sausage for another 5 minutes.
- Add the low sodium chicken broth and bring to a simmer.
- Next add the large handfuls of fresh chopped kale to the simmering broth. Cover the pot and let the kale smother into the soup. As the kale wilts down, decide if you’d like to add more kale or leave it as is.
- Season you’re stew with salt and pepper, to taste.
- Once the kale is completely smothered into the stew, add the cannellini beans and combine into the stew.
- Simmer another 10 minutes, or so, season to taste if necessary, and you’re ready to serve!
