- 5oz bag arugula
- Juice from 1/2 lemon
- 1 tbsp olive oil
- Pinch of salt to taste
- Optional toppings: radishes, salted sunflower seeds, strawberries, avocado, fresh parsley.
- Add olive oil, lemon juice, and a pinch of salt to the bottom of a large mixing bowl and whisk together.
- Add bag of arugula to the top of the dressing and toss well. Plate your arugula in a large shallow salad dish.
- Add toppings: thinly sliced radishes, salted sunflower seeds, diced strawberries, diced avocado, and chopped parsley.
