Ingredients
- 1.5 cups dry jasmine rice
- 1 lb ground chicken
- 1 tbsp taco seasoning blend
- Canned low sodium diced tomatoes, drained and rinsed
- Canned low sodium black beans, drained and rinsed
- Canned low sodium corn, drained and rinsed
- Canned low sodium green beans, drained and rinsed
- Chopped cilantro
- Lime juice
Instructions
- Cook jasmine rice according to package instructions.
- Add olive oil, ground chicken, and taco seasoning to a skillet and cook until browned.
- Layer up your burrito bowls - rice, chicken, vegetables, squeeze of lime juice, and chopped cilantro.
