Ingredients
- 1lb ground turkey
- 1/4 cup diced purple onion
- 1 stalk chopped green onions
- 1 tbsp minced garlic
- 1 egg
- 1/4 cup whole wheat flour
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp red pepper flakes
- 6oz store bought teriyaki sauce
- 1 lime
- 1 tbsp olive oil
- 12oz bag cauliflower rice
- Salt and pepper
- Fresh cilantro for garnish
Instructions
- In a large mixing bowl, combine ground turkey, purple onion, green onion, garlic, egg, flour, salt, pepper, cumin, garlic powder, and red pepper flakes.
- Roll mixture into meatballs and line on a baking sheet. Bake at 400F for 20 min.
- In a large skillet, add half a jar of store-bought teriyaki sauce, juice of 1 lime, and 2 tbsp water. Whisk together and simmer until a thick sauce forms.
- Once meatballs are done, add them to the sauce and coat well.
- In another skillet, add olive oil, bag of riced cauliflower, and a pinch of salt and pepper. Cover and cook on medium heat to steam the cauli rice, stirring every 3-4 min until rice is a texture you like.
- • Plate your cauliflower rice, top with a few meatballs, pour over some sauce, and garnish with chopped cilantro.
