- 1/3 cup edamame
- 1/3 cup shredded carrots
- 1 thinly sliced red bell pepper
- 1/4 cup chopped cilantro
- 2 chopped basil leaves
- 1/2 chopped mango
- 2/3 cup shredded purple cabbage
- 2 tbsp lime juice
- 2 tbsp soy sauce
- 1 cooked chicken breast, shredded
- Prepare all vegetables and add to a large mixing bowl.
- Whisk together lime juice and soy sauce, then add to the salad.
- Serve and enjoy cold.
