Ingredients
- 2 sweet potatoes
- 2 large chicken breasts
- 1/2 cup sugar free BBQ sauce
Instructions
- Place sweet potatoes on a baking sheet and bake at 425F until tender, about 50-60 minutes.
- While potatoes are cooking, add chicken breasts, BBQ sauce, and 2 tbsp water to a medium pot on the stove.
- Simmer on medium/low heat until chicken is cooked and can be easily shred with a fork.
- Shred chicken and mix into the remaining sauce in the pot - add more sauce to preference.
- Cut sweet potatoes lengthwise and spoon half the mixture into each potato.
