I took a look into my pantry and had a ton of random scraps left to eat before my next grocery trip. Not very exciting, but hey, it’s food! So I took the challenge and decided to whip up something both delicious and super healthy. We’re going to call it Healthy Asian Beef and Eggplant Stir Fry!
I buy all my groceries from Trader Joe’s, and had all the fun extras for the sauce already in my pantry! This recipe will be me new go-to. Affordable, easy to make, and also Whole30 approved.

Ingredients
- -FOR THE SAUCE:
- 1/3 cup organic beef stock
- 1 tbsp sesame oil
- 1 tbsp apple cider vinegar
- 1 tbsp red wine vinegar
- 2 tbsp coconut aminos
- 1 tbsp minced garlic
- 1 tbsp ginger paste
- 1 lime juiced
- 1 tbsp nut butter
- -FOR THE STIR FRY:
- 1 tbsp extra virgin olive oil
- 1 lb grass fed, shaved beef
- 1 cup sliced mushrooms
- 1 large eggplant, cubed
- 1 tsp sea salt
- 1 tsp black pepper
- -FOR THE BRUSSELS:
- 3 cups shaved brussels
- 2 tbsp extra virgin olive oil
- 1/4 tsp sea salt
- 1/4 tsp black pepper
Instructions
- In a small bowl, whisk together all sauce ingredients. Set aside.
- In a large wok, heat olive oil and add shaved beef. Season with salt and pepper and cook until browned, about 5-8 minutes.
- Once browned, add sliced mushrooms and sauce, cover, and cook 10 minutes on medium heat, stirring occasionally.
- Add chopped eggplant, stir to coat in the sauce and beef mixture, cover, and cook 10 minutes, until eggplant is softened but still holds it's shape.
- In a separate skillet, heat 2 tbsp olive oil on medium/high heat. Add shaved brussels and sauté uncovered about 7 minutes, stirring very frequently. (You want to char them a bit. Cook until they start to brown and are softened.) Season with salt and pepper.
- Serve your beef and eggplant stir fry over the sautéed brussels and top with slivered almonds and chopped cilantro.
