Pressure Cooker Butternut Squash Risotto

Okay my friends, if you don’t have an Instant Pressure Cooker yet, I highly suggest you jump on the bandwagon because it is currently the most amazing appliance in my kitchen (that is, until something more insane comes along). They are incredibly easy to use and it cooks even the toughest recipes in just minutes! I have a Power Pressure Cooker XL but I’ve also heard the Instant Pot Ultra is great too.

I’ve experimented with my Pressure Cooker a few times, but so far this recipe is my favorite. It requires barely any ingredients, but sometimes the simple recipes can be the most delicious.

The star of this recipe is the Arborio Rice (Risotto) but the Butternut Squash comes in second. Butternut squash is a seasonal vegetable that is so universal. It is best in the Fall/Winter months. This squash is my absolute favorite. It is deliciously sweet and can be cooked so many different ways; roasted, sautéed, mashed, made into a sauce, soup, or I’ve even thrown it into a chili! It makes this specific dish so sweet and tasty, and I can’t wait for you to try it.

Ingredients:

2 cups butternut squash, raw and cubed

2 cups Arborio rice

7 cups organic chicken broth

1/2 large onion, chopped

2 tbsp coconut oil

2 tbsp olive oil

Salt & pepper

1 tsp ground cinnamon

2 tbsp fresh parsley, chopped

Recipe:

Either in your pressure cooker OR on the stovetop, heat oil on medium and and sauté onions and squash for about 5 minutes.

Add rice and 1 cup of chicken broth. Cook (stirring frequently) until all liquid is absorbed.

Add rice and vegetable mixture to your Pressure Cooker pot (if not already), and add in the coconut oil, rest of chicken broth, cinnamon, parsley, and a pinch of S&P.

Close and lock the lid. Make sure the pressure release valve is CLOSED.

Cook on RICE/RISOTTO setting for 10 minutes.

*Note that is takes 15-20 minutes for the pot to pressurize.

When timer is finished, release the pressure valve and let all steam out. *Be careful when you are doing this. The steam is SUPER HOT and will burn your sweet fingers. I suggest using a towel or spoon to move the valve open*

Once finished, unlock and remove the lid. Serve and ENJOY!
