A random creation for my private chef clients today that came out so delish, I’ll be adding it to the meal prep menu for this weekend!
Ingredients
- 1 white onion, diced
- 1 lb ground beef
- 16oz can red enchilada sauce
- 16oz can diced tomatoes
- 16oz can crushed tomatoes
- 16oz can black beans, drained & rinced
- 1-3 cups beef broth
- Toppings: tortilla chips, shredded cheese, cilantro
- Spices: 1 tsp salt, 1/2 tsp pepper, 1/2 tsp chili powder, and 1/2 tsp garlic powder
Instructions
- Sauté white onion until transparent
- Add ground beef and brown fully
- Stir in the spices
- Add a red enchilada sauce, diced tomatoes, crushed tomatoes, black beans, and beef broth
- Stir and bring to a simmer
- Cover and cook 30 minutes
- Add toppings
- Enjoy!
