Another easy one-pan meal for ya! This one was bomb and you can play around with it a few different ways.
Here’s how I made it:
Ingredients
- Chicken breasts
- Zucchini, chopped
- Red onion, diced
- Red bell pepper, chopped
- 1 can, drained chickpeas
- Cooked pasta
- Sauce- splash of milk and some of the starchy pasta water
- Seasonings- salt, pepper, oregano, garlic powder, lemon juice, chunky feta, chopped basil
- Avocado oil
Instructions
- Salt chicken breasts on both sides and cook until golden brown in avocado oil for about 8 minutes per side. Let rest 10 minutes, then slice.
- In the same pan as the chicken, add whatever chopped veggies you’d like. I did zucchini, red onion, and red bell pepper.
- Let those cook a few minutes until softened then add a can of drained chickpeas and some cooked pasta.
- To make the sauce, I added a splash of milk and some of the starchy pasta water (will thicken the sauce a bit).
- Seasoned with salt, pepper, oregano, garlic powder, and lots of lemon juice, chunky feta, and fresh chopped basil.
- Served with the chicken over the top and that’s dinner!
