A great way to elevate your normal chicken recipe! I just wind up with a few items I had in the fridge/pantry and it came out 10/10 delicious.
Here’s what I did!
Ingredients
- 5 oz of plain, nonfat, Greek yogurt
- 2 medium lemons, juiced
- 1/4 cup olive oil
- 1/3 cup of fresh parsley
- 1 diced shallot
- 1 tbsp Dijon mustard
- 1/4 tsp paprika
- 1/4 tsp coriander
- 1/4 tsp garlic powder
- 1/4 tsp turmeric
- 1/2 tsp black pepper
- 1/2 tsp cumin
- 1 tsp salt
- Cilantro (optional)
- Feta (optional)
- PPine Nuts (optional)
Instructions
- In a glass storage container, mix Greek yogurt, lemon juice, olive oil, fresh parsley, shallot, Dijon mustard, and remaining spices.
- Mix up the marinade, add in your chicken thighs (or breasts), coat well, and let sit in the fridge for a few hours or overnight.
- Cook them how you like - I grilled mine - and add toppings if choice! I added some cilantro, feta, pine nuts, and a drizzle of good quality olive oil.
