WE LOVE A 30 MINUTE MEAL & this one would be fantastic to make extra and reheat throughout the week (that’s my plan!)
I used to buy this Thai Green Curry Simmer Sauce at Trader Joes all the time. They carry a green, yellow, and red simmer sauce and they’re all awesome. It’s the easiest and best thing to buy at the grocery store level up plain ole veggies and shrimp.
If you don’t have access to a Trader Joe’s, your grocery store probably still has something like this! It will just be a different brand.
Ingredients
- 1 lb raw peeled and deveined shrimp
- 1 Japanese sweet potato
- Red bell pepper
- Brussels sprouts
- Baby corn
- Olive Oil
- Trader Joes Curry Simmer Sauce
- Kettle & Fire Bone Broth
- Rice or Quinoa
Instructions
- Chop veggies and add everything to a big simmer pan with a splash of olive oil and turn fire to medium.
- Add whole jar of curry simmer sauce. After pouring, refill the jar back up 3/4 way with Kettle & Fire bone broth and add to the pan as well.
- Stir, cover, and simmer your sauce 20 minutes, until veggies are able to be poked with a fork.
- Add 1 lb raw peeled and deveined shrimp. Stir into the sauce and cover for 5 more minutes to cook the shrimp through.
- Season to taste and serve hot over fresh rice/quinoa.
- Dive in and enjoy!
