This is the best and easiest pasta recipe you ever make in your kitchen. Not the lowest in calories, but who the hell cares. RUN to the store and grab the following ingredients immediately:
- 2-3 lemons
- Fresh block Parmesan
- Fresh parsley
- Fresh Basil
- Grass fed butter
- Pappardelle pasta (or any other shape you like)
- 1 lb grass fed ground beef
- 1 egg
- Almond flour
- Spices: salt, pepper, garlic powder, dried oregano, FENNEL SEEDS (👈🼠don’t skip those!)
Now, let’s make it!
Ingredients
- 1 lb grass fed ground beef
- 1/3 cup almond flour
- 1 egg
- 1 cup fresh grated parmesan cheese
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp dried oregano
- 1/4 tsp fennel seed
- 1 tbsp fresh chopped parsley
- 1 tbsp fresh chopped basil
- 16 oz Pappardelle pasta
- 3 lemons
Instructions
- Preheat oven to 400F.
- Bring a large pot of water up to a boil.
- In a medium sized mixing bowl, add the ground beef, almond flour, egg, 1/4 cup of the parmesan cheese, all spices, and chopped basil and parsley and mix well.
- Roll into 1 inch meatballs and place in a nonstick skillet over medium heat. Brown the meatballs for 3 minutes per side.
- Once browned, transfer the meatballs to a lined baking sheet, and bake at 400 for 15 minutes. Once done, remove from the oven and let rest.
- Once your pot of water is boiling, add a large pinch of salt and the pasta and cook. Stir often to make sure no noodles stick together.
- Cook it until Al Dante (almost done), then transfer the pasta from the pot over to your meatball skillet. Make sure to save 2 cups of the starchy pasta water and set aside.
- Now let’s make the pasta sauce! Squeeze the juice from all the lemons into the pasta and add the actual lemon to the pan as well.
- Add 3 tablespoons of grass fed butter, 1/2 cup of the grated parmesan cheese, and the 2 cups of starchy pasta water saved from earlier.
- Reduce the heat to medium low, stir very frequently about 5 to 7 minutes, until a creamy Alfredo-like sauce forms.
- Salt and pepper to taste.
- Remove the pan from heat, add your meatballs to the pasta, top with more chopped fresh parsley, basil, and Parmesan cheese.
- Serve warm and enjoy!
