Greek-Inspired Dinner

 

 

If you’re looking to keep things fresh, low maintenance, and delicious – this recipe is for you! The flavor and spice combinations in this dish are off the charts. And it’s simple as ever to throw together.

Here are the pieces:

  • THE POTATOES: Slice potatoes into quarter inch pieces and transfer to a bowl. Add a drizzle of olive oil and a pinch of salt, black pepper, garlic powder, thyme, and dried oregano. Toss and transfer to your air fryer basket. Fry at 400F for 15 minutes (shake the basket half way through) and they come out perfect!
  • THE GREEK SALAD: Thinly slice all veggies – cucumber, tomato, white onion – and add to a bowl. Add fresh chopped dill and crumbled feta. Drizzle with olive oil, oregano, and a pinch of salt and toss well.
  • THE CRISPY CHICKEN THIGHS: I used bone in, skin on thighs here. Add a drizzle of avocado oil to a hot pan and place them skin-side down. Season the top with salt, pepper, oregano. Flip and repeat. Cook on each side about 7 minutes until you have a crispy golden crust on the outside. Once the timer is up, remove the pan from the stove and cover the pot until ready to serve. This preserves all the juices making it top notch.
