I don’t know about you guys, but fresh spring rolls are my guilty pleasure. I order them every single time I see them on a restaurant menu. And now… we can make them right from the comfort of your own kitchen! They really are that easy.
Here are a few things you’ll need:
👉🏼Vermicelli rice noodles
👉🏼Veggies – lettuce, carrots, cucumbers, & fresh cilantro and mint
👉🏼Protein of choice – I used thinly sliced cooked chicken thighs

Cook vermicelli noodles according to package instructions
Prep your veggies & chicken
Fill up a big bowl with warm or cold water
Dip rice paper into water to soften it
Add fillings and wrap it up! Start by folding in the sides, then fold the top around the filling and wrap it tightly. It’s sticky, so you’ll be able to mold and stretch it until no holes are showing.
Dip and eat! I didn’t show in the video, but I love the “spring roll sweet chili sauce” you can find in the Asian section of the grocery store. It’s delishhhh!
You can also get extra creative with these! Switch it up by adding boiled shrimp, tofu, fruit like strawberries or kiwi, and many more options. Enjoy, SQRLS 🙂
