This was the top Pump&Crunch recipe of 2021, most highly ordered and requested item from Meal Prep Monday, most made and tagged on Instagram, and in my opinion, the most delicious (you’ll see once you make it).
It’s all in the SAUCE. If you know you know. One of the main ingredients is squeeze ginger. Many of you guys mentioned to me that it’s your first time ever experimenting with ginger in the kitchen and that you loved it, which is so great to hear!
PS. In the featured photo below, you see that I cooked this recipe with the chicken ground up and served over the rice. If you follow me on Instagram, you also know that I’ve prepared it with the chicken in meatball form. Either rocks! Do what you prefer.

Ingredients
- 1/2 lb Ground Chicken
- Jasmine rice (however much you'd like)
- 1/3 cup diced pineapple
- 1 tbsp honey
- 1 tbsp squeeze ginger
- 1 tbsp lime juice
- 1 tbsp chopped, fresh cilantro
Instructions
- Prepare jasmine rice according to package instructions and set aside.
- Add ground chicken to a small skillet with a drizzle of olive oil and cook to brown fully. Season with a pinch of salt and pepper. Set aside once cooked.
- Whisk together the sauce: honey, squeeze ginger, juice of 1/2 lime (about 1 tsp), and 1 tbsp chopped cilantro. Set aside.
- Dice pineapple. Set aside.
- Assemble your bowl - Layer the rice first, top with the seasoned ground chicken, next the pineapple, and finally drizzle the sauce over the top, and you're done!
