Soft scrambled eggs are my ultimate favorite way to eat eggs. The texture is soft, creamy, so different than regular scrambled eggs. You’ve got to try this one.
Enjoy them alone or as you see here – on top of a thick slice of toast with fresh avocado over the top. It doesn’t get better than that!
Ingredients
- Eggs
- Salt
- Olive oil spray
- Nonstick skillet
- Rubber spatula
Instructions
- Crack eggs into a small bowl, add a pinch of salt, and whisk them together well.
- Turn a burner on low heat, coat a nonstick pan in nonstick spray (just to be extra sure it doesn't stick ;)), and pour in the whisked eggs.
- Use a rubber spatula and stir in small circles quickly and constantly (this is the trick here). The goal is to avoid clumping in the eggs as they cook, like you see in regular scrambled eggs.
- Continue to stir until a soft, fluffy texture forms; will take 3-5 minutes, depending on how many eggs you are cooking.
