Ingredients
- 1 tbsp olive oil
- 3 cloves garlic, peeled and minced
- 1.5 lbs ground venison (or any other ground meat you have on hand)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp red pepper flakes
- 1/2 tsp dried basil
- 1/2 tsp nutmeg
- 2 cups cauliflower, chopped
- 1 cup dry quinoa
- 2 cups water/broth
- Toppings: cucumbers, tomatoes, cilantro, goat cheese
Instructions
- Add olive oil and minced garlic to a large skillet over medium heat and sauté 2-3 minutes, until garlic is fragrant.
- Add ground meat and cook until the meat is browned fully.
- Once meat is browned, add all seasonings and mix well.
- Add cauliflower, dry quinoa, and water/broth to the pan and combine.
- Reduce the heat to a simmer, cover, and cook for 25 minutes, or until all the liquid is absorbed into the ingredients.
- Once done, fluff with a spoon and add optional toppings.
