Ingredients
- 1 avocado, roughly chopped
- 1 heirloom tomato, roughly chopped
- 1 cucumber, peeled and roughly chopped
- 1 large golden beet, cooked and roughly chopped
- 1/2 tbsp rice vinegar
- 1/2 tbsp sesame oil
- 1 tbsp soy sauce
- 1 tbsp honey
- Optional toppings: goat cheese, sesame seeds, and micro greens
Instructions
- Prepare vegetables and add to a shallow dish.
- Whisk together a quick salad dressing made from the rice vinegar, sesame oil, soy sauce, and honey. Add more or less to taste, if needed.
- Pour the dressing over the vegetables and add optional toppings.
- Serve!
