Ingredients
- 1 diced white onion
- 1 minced jalapeño, seeds removed
- 2 tbsp minced garlic
- 1 tbsp of olive oil
- 2 peeled, diced sweet potatos
- 1 quart low sodium vegetable broth
- 1 tsp chili powder
- 1 tsp cumin
- 1/4 tsp paprika
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 2 cans canellini beans, drained and rinsed
- 1 bunch chopped fresh kale, stems removed - about 3 cups
Instructions
- Add onion, jalapeño, minced garlic, and olive oil to a large pot and sauté over medium heat, until vegetables are softened.
- Add sweet potatoes and all spices.
- Cover and cook on medium heat until potatoes are softened, about 15 minutes.
- Add 2 drained, rinsed cans of canellini beans and chopped kale.
- Cover and simmer over medium heat until kale is wilted, about 5 minutes.
- Salt and pepper to taste.
