Ingredients
- 1 tbsp olive oil
- 2 large chicken breasts, chopped into bite sized pieces
- 1 tbsp sriracha
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp rice vinegar
- 2 tbsp honey
- 1 green bell pepper, seeds removed and chopped
- 2 cups pineapple, chopped
- 1 tsp arrowroot starch
- Jasmine rice
Instructions
- In a large pot, add olive oil and chopped chicken and cook over medium heat until chicken is cooked, about 8 minutes.
- In a small mixing bowl, whisk together sriracha, soy sauce, fish sauce, rice vinegar, and honey.
- Add spicy sauce and chopped green bell pepper to the pot of chicken, cover, and cook about 5 minutes.
- Add chopped pineapple and a starch slurry (1 tsp arrowroot flour + 2 tbsp water whisked together) to the pot, cover, and cook a final 5 minutes to let the sauce thicken.
- Season to taste.
- Serve over jasmine rice.
