I’m a chili fan all year round! This recipe is great because it’s prepared in just one pot, and required barely any “cooking”. Basically just dump the ingredients and leave it alone. I can’t wait for you to try this one, Squirrels. So easy and great for meal prep, also!
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 tbsp garlic, minced
- 1.5 lbs lean, ground beef
- 32 oz can fire roasted diced tomatoes
- 8 oz can tomato sauce
- 16 oz can drained, rinsed black beans
- 16 oz can drained, rinsed red kidney beans
- 1 tbsp chili powder
- 1 tsp cumin
- 2 tsp salt
- 1 tsp black pepper
- 1/2 tsp paprika
Instructions
- Sauté onion and garlic in olive oil until transparent.
- Add ground beef to the pot and cook until browned.
- Season with all spices.
- Add tomato sauce and diced tomatoes and stir well.
- Reduce heat to simmer and cook 1 hour.
- Add beans to the pot.
- Taste to see if you need any additional spices.
- Serve and add your favorite toppings!
