What’s better for a sore throat and a stuffy nose than a warm, creamy bowl of mouthwatering soup? To me, nothing at all! I CRAVE soup when I’m under the weather, so that’s exactly what I whipped up in my kitchen today. This Vegan Lentil and Potato Soup takes just minutes to throw together, and will be finished by the time you finish putting away a load of laundry and take your shower for the night (that’s what I was doing while it was cooking lol). You’ll love it!

Ingredients
- 1 tbsp olive oil
- 1 large white onion, chopped
- 3 celery stalks, chopped
- 4 large carrots, roughly chopped
- 2 cups purple potatoes, roughly chopped
- 2 tbsp minced garlic
- 1 tbsp sea salt
- 1 tsp black pepper
- 1 tbsp garlic powder
- 1 tbsp dried oregano
- 1/4 tsp red pepper flakes
- 3/4 cup dried green lentils
- 5 cups vegetable broth
- 1/3 cup lemon juice (about 2 lemons, juiced)
Instructions
- In a large pot, heat olive oil to medium heat. Add onions, celery, carrots, and potato and sauté about 10 minutes, uncovered.
- Add minced garlic, dried lentils, and all seasonings, stir and cook another 2-3 minutes.
- Add vegetable broth and lemon juice to the pot, stir to combine.
- Bring your soup to a simmer, cover, and cook 45 minutes - 1 hour on medium/low heat.
- Serve and enjoy!
