Do you ever sit in front of the fridge with the door open just staring at what’s inside and can’t figure out what to make for dinner? I do that ALL. THE. TIME. Deciding what to cook is tough sometimes. You can have all the ingredients in front of you to make something magical, but it’s the “what” that’s always the question.
If you’re like me, I always have some sort of meat in the fridge/freezer. I keep a lot of it frozen so I can use it when I need it. The most common meats in my fridge/freezer are Grass-Fed Beef, Ground Turkey, Ground Venison, and Breakfast Pork Sausage. I’ll be honest with you, I get tired of eating meat every once in a while. It’s a phase. I’ll substitute my protein intake with a protein smoothie, protein pancakes, or with eggs. I just don’t think it tastes good by itself a lot of the time, if I’m being real with you guys. I’ll go through a few weeks where I can’t stand it, then I’ll love it again. I’m strange, but I have a feeling I’m not alone with this… I have to make myself eat meat sometimes, and if I’m going to eat it when I’m going through that strange “anti-meat phase” of mine, it has to taste pretty darn good. And this taco meat recipe, tasted pretty. darn. good.
For my Meal Preparation clients last week, I planned on making some taco salads. I don’t use the pre-made taco seasoning blend because of the added salt and I prefer to use my own organic seasonings. So, I threw together a seasoning blend that came out GREAT! I served my Grass-Fed Beef Taco Meat over some Organic romaine lettuce, and topped it with cucumbers, tomatoes, yellow bell peppers, and fresh cilantro. I didn’t add salad dressing with my clients’ meals but if I were eating it, I’d probably dress it with some salsa drizzled over the top!
If you’re ever in a daze staring at the fridge and can’t figure out what to make, this recipe has got your back. It’s delicious, hearty, and can go on salads, tortillas, with eggs, heck between two pieces of bread, GET CREATIVE! That’s what life’s all about anyway.

Ingredients:
1 tbsp Organic Olive Oil
1 lb ground meat – (beef, turkey, chicken, deer, lamb… whatever the heck you want really)
1/2 cup Onion, Bell Pepper, and Celery Mix – (I use Guidry’s because it’s insanely easy and just the best)
1 tsp Fresh Garlic, minced
1/3 cup Tomato Sauce

Seasoning Blend:
1 tbsp Cumin
1 tbsp Oregano, dried
1 tsp Paprika
1 tbsp Chili Powder
1/2 tsp Garlic Powder
1/2 tsp Nutmeg
1/2 tsp Black Pepper

Recipe:
Heat olive oil in a pan and sauté onion, pepper, and celery mix about 5 minutes, or until slightly transparent. Add fresh garlic and cook another 2-3 minutes.
Add your ground meat into the vegetables along with all seasonings. Cook until browned, smashing the meat into small pieces. – (I used a potato smasher)
Once eat is browned, add tomato sauce and cook covered on medium heat about 10 minutes.
Serve however you like, garnish with fresh cilantro, and try not to eat the whole pot!
SIMPLE. DELICIOUS. HEALTHY.
