Healthy Hasselback Herb Roasted Potatoes


Happy Tuesday, everyone! Every week I go Live on Pump&Crunch’s FaceBook and Instagram accounts at 5pm Central Time with a new recipe prepared in real time. Yesterday was our 12th episode for the show! It’s been so much fun to interact and cook with you guys weekly.¬†Yesterday, we prepared Healthy Hasselback Herb Roasted Potatoes.

These potatoes are absolutely beautiful and are beyond perfect for your next fancy dinner or holiday party! With only a few simple steps, these babies are ready to grub on. This recipe can be prepared with white potatoes or sweet potatoes. And they taste just as good as they look, I promise ūüėČ

I also paired my potatoes with a side sauce that is phenomenal. The main ingredient is Greek Yogurt! I use Greek yogurt in a lot of my cooking because it is a fantastic, healthy substitute for milk, cream, sour cream, heavy cream, etc. I used it today to create a dipping sauce for these potatoes with a secret ingredient that you’ll never guess! Healthy Hasselback Herb Roasted Potatoes


Prep Time: 15 minutes

Cook Time: 45 minutes


Potato Ingredients:

  • 6 Potatoes of your choice (the bigger the better)
  • 2 Tbsp Grass-Fed Ghee
  • 1 Tsp Extra Virgin Olive Oil
  • 1 Tsp Fresh Rosemary, chopped finely
  • 1 Tsp Fresh Thyme, chopped finely
  • 1 Tsp Minced Garlic
  • 1/4 Tsp Sea Salt
  • 1/4 Tsp Black Pepper

Sauce Ingredients:

  • 5 oz. Container of Plain, Non-Fat Greek Yogurt
  • 1/2 Cup Pomegranate Seeds
  • 1 Tsp Fresh Rosemary, chopped finely



  1. Preheat oven to 450F.
  2. Slice potatoes in 1/8 inch slices, 2/3 of the way down. Be careful not to cut the potato in half accidentally!
  3. Melt ghee in the oven, add rest of the potato ingredients and coat potatoes in the sauce using a spoon to drizzle. Try to get the sauce best you can between the potato slices.
  4. Place potatoes in a oven-safe dish and bake at 450F for 45 minutes.
  5. Next, prepare the dipping sauce by adding all of the ingredients into a bowl and stir to combine. Easy peasy!
  6. Once potatoes are finished cooking, remove from oven and let cook 10 minutes.
  7. Serve your Healthy Hasselback Herb Roasted Potatoes with Greek Yogurt Pomegranate Sauce on the side for dipping.
