Sweet & Spicy Asian Chicken and Broccoli

DSC_0692

I love anything ethnic, especially oriental. I will add sriracha or Coconut Aminos (soy sauce) to just about anything. Oh and sesame oil is quite possibly the most delicious thing I’ve ever tasted. Get ya some if you don’t have any, just saying! A fabulous item to keep handy in the pantry to add extra flavor to just about anything you’re cooking. YUM.

Here’s a question for you… Have you ever been to a Chinese buffet? One of those “all you can eat” meals that have allllll the goods. Orange chicken, beef and broccoli, combination lo mein, fried rice, egg drop soup, EGGROLLS, etc., etc., etc. Literally the place where dreams come true, BUT also quite the stomach ache later, right? I’ve recreated some of these classic asian style dishes to healthify them into a lower calorie, cleaner version for us to enjoy!

This recipe is sweet and spicy (not sour) chicken and broccoli. Have you ever tasted Sesame Chicken and Broccoli (which is insanely delicious)? The sauce is super duper thick and yummy, right? Well for this version, I didn’t add any refined sugars, which that and flour are what make the sauce super thick and tasting like heaven. For this recipe, I substituted honey to sweeten the sauce instead of the artificial ingredients that aren’t the best for us. Also, instead of breading the chicken and frying it, I chopped and sautéed it on the stove in sesame oil. Simple changes to a traditional meal that still taste great, but make this dish better for you!

Let’s get cooking!

Prep Time: 10 minutes

Cook Time: 20 minutes

Serves: 2 people

Ingredients:

2 Skinless, Boneless Chicken Breasts – diced into about 1 inch pieces

4 Cups of Broccoli Florets

1 Tbsp Fresh Garlic, minced

1 Tbsp Sesame Oil

1/2 Tsp Sea Salt

1/2 Tsp Black Pepper

1 Tbsp Sesame Seeds

Sauce Ingredients:

1 Tbsp Coconut Aminos (Soy Sauce alternative)

2 Tbsp Raw, Organic Honey

1 Tbsp Sriracha

1 Tsp Ground Ginger

1/4 Tsp Crushed Red Pepper

Recipe:

  1. Bring a medium sized pot of water to a bowl. Add broccoli and cook about 6-8 minutes, or until broccoli florets are al dente (vibrant green in color). Strain and set aside.
  2. In a skillet, heat sesame oil on medium heat. Add raw, chopped chicken breast and garlic to the skillet and season with salt and pepper. Cook about 10 minutes, or until juice runs clear.
  3. In a bowl, mix together all sauce ingredients. When chicken is finished cooking, add it to the pan. Simmer 2-3 minutes.
  4. Combine broccoli and chicken mixture until sauce coats broccoli, serve, and top with sesame seeds.
  5. ENJOY!
