One-Pan Shrimp Fajitas

Y’all know me, I’m always about the quickest, most simple recipes and meals; and this one’s a winner. If you’re needing something for dinner but don’t have time to sit by the stove and watch it cook, this recipe is for you! And who doesn’t love Tex Mex, am I right, or am I right???

Here is a one-pan recipe that takes about 3 minutes to put together and 25-30 minutes to cook. It’s THAT SIMPLE people! Eating healthy doesn’t have to be difficult or taste bad. This meal is amazing and is so very versatile. When I go to Mexican restaurants I usually go straight for the fajitas or a fajita-type salad. These are the bones of the fajitas; now you just have to add it to something. I recommend a salad, lettuce wraps, or making your own tacos! Top these with cilantro, fresh onions, pico, avocado, the options are really endless. Get creative with this one, fa sho.

It’s literally as easy as 1-2-3…….

Step 1: Heat oven to 350F & lay shrimp, peppers, and onions on a baking sheet.

In this photo, I have 1 lb of peeled, deveined shrimp (~50 medium sized) and about 4 cups of bell peppers and onions. I kept chopping the peppers and onions until I couldn’t fit any more on the pan. The peppers and onions do shrink, so that’s why I added more!

Step 2: Add seasonings, olive oil, and lime juice and toss well.

For my seasoning blend, I combined ground cumin, paprika, oregano, chili powder, cayenne pepper, garlic powder, black pepper, and sea salt. This is my favorite seasoning combination and these are always stocked in my pantry. I added the seasonings, along with the juice of 1 lime, and 2 tbsp of Extra Virgin Olive Oil.

Make sure you toss well to coat all the shrimp and peppers. Once tossed, put it in the oven and go prepare your sides!

Step 3: Bake at 350F for 20-25 minutes (flipping half way!).

If you like your peppers on the crunchy side, you can take everything out a couple minutes early!

 

Step 4: Remove from oven and prepare ’em how you like ’em.
